Cauliflower Rice

An easy way to make cauliflower rice using either a head of cauliflower, or a bag of cauliflower, and a food processor.

Ingredients

  • 1 12oz medium head cauliflower
  • 1/2 cup water

Instructions

  1. Take 1 medium head of cauliflower and cut into florets.
  2. Using a food processor, pulse florets about 5-7 times until the pieces are chopped and resemble rice. Place in steamer basket on the stove.
  3. Heat ½ cup water over medium heat. Place steamer basket in pot with water and steam for 5-7 minutes.
  4. Take out the cauliflower and remove the excess moisture. You can use paper towels or a cheese cloth.

This method also works with cauliflower florets you buy in a bag. Which lately, I've been doing to save on time.

Another method Ive been using a lot more lately is to use the microwave vs. a steam basket. Before I use the food processor, I'll pop in a bag of cauliflower florets for 3-5 minutes. Drain the excess water, and throw the florets in a food processor.
