I am a huge fan of peanut butter. I’m just going to be upfront and let you know now. That means that when it comes to creating recipes, peanut butter falls somewhere in my top ten. If I can manage to include chocolate in the recipe, then it’s an even better combination.
I can’t say that this peanut butter cookie recipe is all too original. If you know how to make basic peanut butter cookies without flour, then you know the original three-ingredient sugar free peanut butter cookie recipe is all too easy to make! The biggest difference here is that I use Swerve Sweetener in place of sugar.
When I was playing around with this recipe, I found that I preferred adding in 1 egg because it really helps the recipe hold together instead of turning into a crumbly mess. The greek yogurt helps keep the cookies moist without giving it too much of a greek yogurt flavor. Personally, I like my cookies moist and chewy, and I realized that my peanut butter cookies always ended up more stiff after a couple days. So far, this recipe is my go to for some sugar free peanut butter cookies. I’m looking forward to playing around with this recipe a little bit more in the future.
Sugar Free Peanut Butter Cookies
- 1 cup creamy peanut butter
- 1 cup Swerve Sweetener
- 1 egg
- 1 tsp water
- 1 Tbsp Greek yogurt
- Preheat oven to 350 degrees.Line a large baking sheet with parchment paper.
- In a large bowl, combine ingredients and mix until blended. Roll dough into Tbsp sized balls and place on prepared baking sheet. Press with fork to make a slight indention.
- Bake for 10 minutes.
I don’t really have a preference to the type of peanut butter I use, but I do find my eyes wandering at the natural selection. I make sure to check the label for only “peanuts” as the ingredients as some companies include added sugars or oils.
