Crispy Cheddar Cauliflower Tater Tots

An easy to make crispy cheddar cauliflower tater tots recipe. It's low carb, low in calories and high in fiber.
  • 3 cups riced cauliflower
  • ¼ cup parmesan cheese
  • 2 oz extra sharp cheese
  • 1 tbsp coconut flour
  • 1 tsp psyllium husk powder
  • 1 egg, large
  • ½ tsp salt
  1. Preheat the oven to 400 deg F.
  2. In a large mixing bowl, mix together the riced cauliflower, parmesan cheese, and egg.
  3. Slowly, mix in the ingredients of coconut flour, psyllium husk powder and cheese until well combined.
  4. Measure out tater tots using a tablespoon. Roll into a ball and mold into the shape of a tater tot.
  5. Place on cookie mat and bake for 30 minutes, flipping on each side carefully every 10 minutes.
