Gluten Free Coconut Flour Bread

An easy gluten free coconut flour bread recipe.
  • ¾ cup coconut flour
  • 12 large eggs, room temperature
  • 1½ sticks unsalted butter, room temperature
  • ¾ cup seltzer water
  • ¾ tsp salt
  • ¾ tsp baking powder
  • ¾ tsp xanthan gum
  • 1½ tsp cream of tartar
  • ½ tbsp psyllium husk powder
  1. Preheat the oven to 325 deg F.
  2. Using a small bowl, separate the egg yolks from the egg whites. Set aside the egg whites.
  3. Using a large bowl of mixer, add the egg yolks to a mixer and blend together with the butter until smooth. Set aside.
  4. In another bowl mix together the dry ingredients of coconut flour, salt, baking powder, xanthan gum and psyllium husk powder.
  5. Turn on the mixer and slowly add in the dry ingredients and add the seltzer water until smooth.
  6. Taking a hand mixer, start blending the egg whites for 1-2 minutes.
  7. Then, toss in the cream of tartar and continue to blend until soft peaks are formed.
  8. Slowly mix together the egg whites and the batter.
  9. Spray a 9x5 loaf pan and add the batter.
  10. Bake until fully baked or until a toothpick comes out clean from the center.
